1cupCheddar Cheeseshredded or grated. you can also use goat cheese, mozzarella, or whatever you like.
Vegetables (You can change these to any vegetables you enjoy)
1/2cupBell Peppersred and yellow chopped
1/2cupCherry Tomatoeshalved
1/4cupYellow Onionchopped or sliced
1/2cupBaby Spinachroughly chopped

1tablespoonFresh Basil
Instructions
To start making your frittata, crack the eggs into a medium mixing bowl and add cream and the salt. Give it all a good whisk to ensure that the egg is blended together nicely.
Add most of the cheese, reserving some for a topping.
Warm olive oil in a 12-inch cast iron skillet or other oven-safe large skillet over medium heat. Add onions and peppers and cook until they're soft, stirring occasionally.
Add Spinach and Tomatoes and stir in with onions and peppers.
Salt to taste.
Give your eggs one last stir and pour the egg mixture over the vegetables. Use a spatula or spoon to evenly spread it out.
If you are adding a cheese topping, sprinkle some on top of your frittata.
When the edge of the frittata begins to set and lighten in color, usually about a minute, carefully transfer the pan to the oven. Once it's in the oven cook for 8 to 15 minutes, checking constantly. Your frittata will be done when its center starts to jiggles and the egg seem cooked and puffed. Do not overcook.
Using oven gloves, carefully remove the pan from oven and let cool. Final touches of herbs, tomatoes, or other garnish can be added before slicing with a sharp knife and serving. Enjoy!
