Frittata Recipe
Equipment
- 1 Cast Iron Skillet 12"
Ingredients
Egg Mix
- 6 Large Eggs
- 5 tablespoons Heavy Cream
- 1/2 teaspoon Kosher Salt
- 1 cup Cheddar Cheese shredded or grated. you can also use goat cheese, mozzarella, or whatever you like.
Vegetables (You can change these to any vegetables you enjoy)
- 1/2 cup Bell Peppers red and yellow chopped
- 1/2 cup Cherry Tomatoes halved
- 1/4 cup Yellow Onion chopped or sliced
- 1/2 cup Baby Spinach roughly chopped
Garnish
- 1 tablespoon Fresh Basil
Instructions
- To start making your frittata, crack the eggs into a medium mixing bowl and add cream and the salt. Give it all a good whisk to ensure that the egg is blended together nicely.
- Add most of the cheese, reserving some for a topping.
- Warm olive oil in a 12-inch cast iron skillet or other oven-safe large skillet over medium heat. Add onions and peppers and cook until they're soft, stirring occasionally.
- Add Spinach and Tomatoes and stir in with onions and peppers.
- Salt to taste.
- Give your eggs one last stir and pour the egg mixture over the vegetables. Use a spatula or spoon to evenly spread it out.
- If you are adding a cheese topping, sprinkle some on top of your frittata.
- When the edge of the frittata begins to set and lighten in color, usually about a minute, carefully transfer the pan to the oven. Once it's in the oven cook for 8 to 15 minutes, checking constantly. Your frittata will be done when its center starts to jiggles and the egg seem cooked and puffed. Do not overcook.
- Using oven gloves, carefully remove the pan from oven and let cool. Final touches of herbs, tomatoes, or other garnish can be added before slicing with a sharp knife and serving. Enjoy!
