- 2 tablespoons Olive Oil
- 3/4 cups Yellow Onion diced
- 1/2 cup Celery diced
- 1/2 cup Carrots peeled and diced
- 1 cup Zucchini diced
- 3/4 teaspoon Kosher Salt
- Ground Black Pepper to taste
- 14 ounces Diced Tomatoes 1 can
- 4 cups Vegetable Broth
- 4 tablespoons Tomato Paste
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 2 Bay Leaves
- 15 ounces Kidney Beans 1 can. rinsed.
- 15 ounces White Beans 1 can. rinsed.
- 1/2 cup Chopped Green Beans fresh or frozen
- 2 teaspoons Minced Garlic
- 1/2 cups Pasta elbows or shells
- 4 tablespoons Fresh Parsley optional
- 1 tablespoon Grated Parmesan Cheese optional
Instructions
Saute Vegetables
- Warm the oil over medium heat, then add diced onions and crisp celery alongside carrots and zucchini for an aromatic taste sensation!
- Let the vegetables cook until they are tender, taking 3-5 minutes. Then add in garlic and let it sauté for half a minute. Finally, give your colorful concoction an extra flavor kick by sprinkling on salt and pepper to taste!
Combine and Simmer
- Add the tomatoes, broth, and paste into your pot. Then sprinkle in the Thyme and Oregano.
- Add Bay Leaves.
