Italian Pasta Salad Recipe

- 1 cup Homemade Italian Dressing homemade is recommended but store-bought can be used
Italian Pasta Salad
- 1 pound Rotini Pasta or Fusilli Pasta
- 1 cup Hard Salami chopped
- 1/2 cup Roasted Peppers or Piquillo chopped
- 2 cups Grape Tomatoes halved. cherry tomatoes can also be used
- 2 cup Bell Peppers chopped
- 1/2 cup Red Onion chopped
- 8 ounces Mozzarella pearls
- 1/2 cup Black Olives, Pitted optional
- 1/4 cup Fresh Parsley chopped
- 1/8 cup Fresh Basil optional
Instructions
- Heat a large pot of water to a rolling boil and add a generous pinch of salt. Once it resumes boiling, add in the dried pasta. Cook for the time duration specified on the package stirring occasionally. Test if needed until al dente.
- When the pasta is done cooking, carefully drain it in a colander and then rinse with cold water. After shaking off the excess water let cool for 10-15 minutes.
- Transfer the pasta to a large salad bowl.
- Add all other ingredients except dressing and fresh basil to bowl.
- The final step in is to pour the dressing over the top, and then gently tossing until everything is evenly coated. To ensure your salad is just right, taste it to gauge flavor. Add just a pinch of salt or a grind of pepper if needed to bring out the natural flavors.
